Chicken burrito with lime guacamole

🍲 Single Dish 🌮 Tex-Mex 🥩 Omnivore Serves 4

Ingredients

  • 4 tortillas
  • 400 g sliced chicken breast
  • 80 g lettuce
  • 150 g cooked black beans
  • 200 g sliced cheddar
  • 200 g tomatoes

For the marinade

  • 30 g extra-virgin olive oil
  • 10 g lime juice
  • zest of 1 lime
  • salt (as needed)
  • 1 g cayenne pepper
  • 20 g honey

For the guacamole

  • 1 ripe avocado
  • 10 g shallot
  • 10 g fresh chili
  • 150 g tomatoes
  • 10 g lime juice
  • 20 g extra-virgin olive oil
  • salt and pepper (as needed)

Method

  1. Make the guacamole:
    • mash the avocado
    • add lime juice, salt, and pepper
    • finely chop shallot, tomatoes, and chili
    • mix everything with the olive oil
  2. Marinate the chicken:
    • cut the chicken into strips
    • marinate with oil, honey, cayenne, lime zest and juice
    • rest in the fridge for 30 minutes
  3. Assemble the burritos:
    • cook the marinated chicken in a pan for 5–6 minutes
    • warm the tortillas
    • add cheddar and let it melt
    • fill with lettuce, tomatoes, beans, and chicken
    • fold in the sides and roll up
    • top with cheddar strips
    • broil at 250 °C for 3 minutes
  4. Serve hot, with guacamole on the side.

Keeps in the fridge for 1 day.
