Black bean salad

🥔 Side 🌮 Tex-Mex 🥬 Vegetarian Serves 6

Ingredients

  • 2 cans corn (285 g each), rinsed
  • 2 cans black beans (425 g each), rinsed and drained
  • 2 red bell peppers, diced
  • 2 garlic cloves, minced
  • 2 tbsp chopped shallot
  • 2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 tbsp sugar
  • 9 tbsp extra-virgin olive oil
  • 1 tsp lime zest
  • 6 tbsp lime juice
  • 1/2 cup chopped fresh cilantro
  • 2 avocados

Method

  1. Rinse and drain the black beans and corn.
  2. In a large bowl, combine corn, beans, peppers, garlic, and shallot.
  3. Add salt, cayenne, sugar, olive oil, lime zest, and lime juice.
  4. Mix well and refrigerate for a few hours.
  5. Before serving, add diced avocado.
  6. Mix gently and adjust salt and lime if needed.

Notes

Great served with tortilla chips.
