Ingredients
2 cans corn (285 g each), rinsed
2 cans black beans (425 g each), rinsed and drained
2 red bell peppers, diced
2 garlic cloves, minced
2 tbsp chopped shallot
2 tsp salt
1/4 tsp cayenne pepper
2 tbsp sugar
9 tbsp extra-virgin olive oil
1 tsp lime zest
6 tbsp lime juice
1/2 cup chopped fresh cilantro
2 avocados
Method
Rinse and drain the black beans and corn.
In a large bowl, combine corn, beans, peppers, garlic, and shallot.
Add salt, cayenne, sugar, olive oil, lime zest, and lime juice.
Mix well and refrigerate for a few hours.
Before serving, add diced avocado.
Mix gently and adjust salt and lime if needed.
Notes
Great served with tortilla chips.
