Pumpkin muffins

Ingredients

  • 250 g cleaned pumpkin
  • 200 g sugar
  • 2 eggs
  • 130 g neutral vegetable oil
  • 70 g potato starch
  • 250 g 00 flour
  • 16 g baking powder
  • nutmeg (as needed)
  • ground cinnamon (as needed)
  • powdered sugar (as needed, for decorating)

Method

  1. Crack the eggs into the food processor bowl, add the sugar, and blend until smooth.
  2. Pour in the oil. Swap to the grating attachment, add the pumpkin pieces, and grate finely.
  3. Switch back to the mixing blades, add the potato starch and blend. Add nutmeg, cinnamon, flour, and baking powder. Mix until smooth and uniform.
  4. Line a muffin tin with paper liners and fill each with 1 spoonful of batter.
  5. Bake in a preheated static oven at 180 °C for about 25 minutes. Let cool for a few minutes before removing from the tin.
  6. Mix powdered sugar with a little cinnamon and dust over the cooled muffins.
