Ingredients
Servings: 4 servings
- Chicken breast (500 g)
- Chicken thighs (300 g, boneless)
- Medium onion (2)
- Barbecue sauce (40 g)
- Beer (500 ml)
- Butter (20 g)
- Brown sugar (10 g)
- Garlic powder (to taste)
- Paprika (to taste)
- Double concentrated tomato paste (5 g)
- Salt (to taste)
- Pepper (to taste)
Chicken breast and thighs marinated in beer and barbecue sauce, braised slowly over caramelized onions until they shred with a fork.
Steps
- In a bowl, combine the chicken breast, thighs, beer, paprika, garlic powder, and barbecue sauce. Marinate for at least 1 hour.
- Slice the onions and soften them in a pan with the butter and the brown sugar, letting them caramelize lightly.
- Add the chicken, drained from its marinade, and brown it lightly.
- Pour in the marinade liquid and add the tomato paste, salt, and pepper.
- Cover and cook very gently for at least 1 hour.
- Let the chicken cool slightly, then shred it — it will pull apart easily.
Notes
- Let it rest until just warm before shredding.
- Excellent between two slices of lightly warmed crispy schiacciata.
- Servings are an estimate — the source doesn’t state them.
