Pistachio-crusted salmon

Ingredients

  • 2 salmon fillets
  • 50 g chopped pistachios
  • 2 tsp mustard
  • 2 tsp honey
  • juice of 1/2 lemon
  • extra-virgin olive oil (as needed)
  • salt (as needed)
  • white pepper (as needed)

Method

  1. Marinate the salmon in a baking dish with olive oil, lemon juice, salt, and pepper.
  2. Cover and marinate in the fridge for about 1 hour (less if needed).
  3. Spread mustard on each fillet, then spread honey.
  4. Press the chopped pistachios onto the salmon.
  5. Bake in a preheated oven at 180 °C for 12–15 minutes, depending on thickness.
