1 kg potatoes
olive oil
clarified butter
rosemary
salt (as needed)
Method
Bring a pot of water to a boil.
Preheat the oven (static) to 200 °C.
Add a generous drizzle of oil and a generous spoonful of clarified butter to a baking tray.
Put the tray in the oven to heat the oil and butter.
Peel the potatoes.
Cut the potatoes into fairly large cubes (about 2 cm).
Boil the potatoes for 10–15 minutes, until tender inside (check with a skewer).
Drain the potatoes.
Add the potatoes to the hot baking tray.
Turn and check every 15 minutes (total time 45 minutes to 1 hour).
Remove from the oven and season with salt and rosemary.
