Oven-roasted potatoes

Ingredients

  • 1 kg potatoes
  • olive oil
  • clarified butter
  • rosemary
  • salt (as needed)

Method

  1. Bring a pot of water to a boil.
  2. Preheat the oven (static) to 200 °C.
  3. Add a generous drizzle of oil and a generous spoonful of clarified butter to a baking tray.
  4. Put the tray in the oven to heat the oil and butter.
  5. Peel the potatoes.
  6. Cut the potatoes into fairly large cubes (about 2 cm).
  7. Boil the potatoes for 10–15 minutes, until tender inside (check with a skewer).
  8. Drain the potatoes.
  9. Add the potatoes to the hot baking tray.
  10. Turn and check every 15 minutes (total time 45 minutes to 1 hour).
  11. Remove from the oven and season with salt and rosemary.
