Masala sauce

Ingredients

  • 250 g canned peeled tomatoes
  • 200 ml coconut milk
  • 1/2 golden onion
  • 1 garlic clove
  • 1 chili pepper
  • fresh ginger (as needed)
  • extra-virgin olive oil (as needed)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1 tbsp mild curry powder
  • salt (as needed)
  • cilantro (as needed)
  • lime juice (as needed)

Method

  1. Finely chop the onion, garlic, ginger, and chili. Sauté in a large pot with a little oil, adding cumin, paprika, curry, garam masala, and salt.
  2. Cook for a few minutes, then add the peeled tomatoes and 1 glass of water.
  3. Simmer, stirring often, and occasionally crush the tomatoes with a spoon.
  4. Add the coconut milk and cook for about 5 minutes more. Finish with chopped cilantro and lime juice.

Storage

Keeps for 4–5 days in the fridge in an airtight container.

Notes

This recipe is free of gluten, soy, peanuts, tree nuts, and sesame.
