Ingredients
Servings: 4 servings
- King prawns (300 g, previously frozen / sushi-grade)
- Lemon zest (to taste)
- Lemon juice (juice of 1 lemon)
- Lime juice (juice of 1 lime)
- Extra virgin olive oil (to taste)
- Salt (to taste)
- Black peppercorns (to taste)
Steps
- Make sure the king prawns have been properly frozen for safety, then thaw them.
- Remove the heads, peel off the shells, and make a shallow cut along the back of each prawn to remove the intestinal vein. Rinse well under cold running water.
- Cut the king prawns into small pieces and transfer them to a bowl.
- Wash the lemon well and grate part of the zest directly over the prawns.
- Halve the lemon and lime and squeeze their juice over the tartare.
- Add a drizzle of extra virgin olive oil, salt, and a generous grinding of pepper. Mix well.
- Cover with a lid or plastic wrap and refrigerate for 1 hour, stirring occasionally.
- Serve in individual bowls, finishing with a little more pepper and a drizzle of extra virgin olive oil.
Notes
- Use an untreated (unwaxed) lemon since the zest is grated straight into the dish.
- Marinated king prawn tartare should be eaten as soon as possible, and in any case within a few hours.
