Ingredients
Servings: 6 servings
For the base:
- Tortillas (6, about 50 g each)
- Cheddar (90 g, grated)
- Bacon (3 slices)
For the sauce:
- Pickled gherkins (2)
- Mayonnaise (50 g)
- Greek yogurt (110 g)
- Sweet paprika (to taste)
- Garlic powder (to taste)
- Meat extract (1 tsp, or a bouillon cube)
- Ketchup (25 g)
- Mustard (20 g)
For the meat:
- Ground beef (400 g, extra-lean)
- White onion (1)
- Salt (1 g)
- Pepper (to taste)
- Double concentrated tomato paste (25 g)
Steps
- Soften the diced onion in a pan with a splash of water.
- Once softened, add the tomato paste and toast it, then add the ground beef and cook over high heat with the salt and pepper.
- For the sauce, chop the gherkins and mix them with all the other sauce ingredients in a bowl.
- Off the heat, stir the sauce into the meat and mix well.
- Crisp the bacon in an oven or air fryer at 200°C for about 6 minutes, then chop it finely.
- Fill the tortillas with the meat in the center, the grated cheese, and the bacon. To make them easier to handle, warm them for 15 seconds in the microwave first.
- Once closed, sear the burritos in a hot pan over high heat to seal them.
