Chocolate chip muffins

Ingredients

  • 3 eggs
  • 180 g sugar
  • 150 ml milk
  • 150 g butter
  • 300 g flour
  • 60 g unsweetened cocoa powder
  • 80 g chocolate chips
  • 16 g baking powder (1 packet)

Method

  1. Crack the eggs into a bowl and start mixing with an electric whisk.
  2. Add the sugar and keep mixing.
  3. Add the melted butter, milk, and cocoa powder. Mix well.
  4. Add the flour gradually, then add the baking powder.
  5. Fold in the chocolate chips and mix until smooth and lump-free.
  6. Line a 12-cup muffin tin with paper liners and fill each about 3/4 full.
  7. Bake in a preheated fan oven at 170 °C for 20–25 minutes.

Tips and variations

  • Add raspberries or nuts.
  • For a version without cocoa, omit the cocoa and replace it with the same amount of flour.
  • For gluten-free, use a dedicated gluten-free flour blend or rice flour.
  • For a butter-free version, replace butter with about 120 g neutral oil.
  • Chocolate chips can be replaced with chopped chocolate.
